Budincă de spanac – spinach pie



  • 1600 g frozen spinach
  • 2 onions
  • 3 cloves of garlic
  • 2 tablespoons of oil
  • 200 g feta cheese
  • 150 g ricotta
  • 150 ml cream
  • 3 eggs
  • thyme and dill
  • salt & pepper


Unfreeze the spinach. Chop the onions and garlic in small cubes and sauté those in a pan. With a fork mash the feta cheese. In a bowl mix all the ingredients. Check for salt since the feta cheese is salty so you might need less salt than usual. Use a 25 cm round form to bake the pie. Grease the form, pour the mixture and bake for about 40 minutes at 190 degrees C. Serve it as a side dish or as a main dish with fried eggs and some good bread.

You can also make into portions, this mixture should give you six small portions.

If you want to use fresh spinach you will need about 2 kg. Clean and wash well. In a big pot cook up the water with plenty of salt. Add the spinach and let it cook for about 5 minutes. Strain and then chop the spinach. Add to the mixture and go ahead as above.
