100g caster sugar
100g self-raising flour
1. Preheat the oven to 190 C. Grease a 20 or 23cm round cake tin.
2. In a medium bowl, whip together the eggs and caster sugar until fluffy. Fold in flour. Pour into the prepared tin.
3. Bake for 20 minutes in the preheated oven, or until the top of the cake springs back when lightly pressed. Cool in the tin over a wire rack. Sprinkle with icing sugar
You can also cut one apple into small cubes and put them on top of the cake, or use cherries or other berries. You can also use dried fruit.
