Supa de salata – lettuce soup

 

22This is one of my favourite soups for summer. Very easy to make and can be eaten cold.

  • 2 lettuces
  • 1 carrot
  • 1 small onion
  • 1 tablespoon olive oil
  • 250 ml cream
  • 2 eggs
  • vegetable stock, salt and pepper
  • 50 g chopped fresh dill

Peel the onion and cut in cubes, grate the carrot. In a pot add the olive oil and sauté the onion and the carrot for a couple of minutes. Wash the lettuce and cut in large stripes. Add the lettuce to the pot and add 1,5 l of water. Let it simmer for about 12 minutes. Add the vegetable stock cubes (as indicated on package), salt and pepper. Make an omelette with the two eggs. Let it cool and cut in pieces.  Add the cream and the omelette and let it simmer for another 3-4 minutes. Take off heat and add chopped dill.

Serve with bread.

You can also add some lemon juice when you serve for added freshness.
